Creamy Berry-Vanilla Cauliflower Smoothie

Ingredients:

  • 1 cup frozen riced or chopped cauliflower florets (must be frozen)
  • 1 cup frozen mixed berries (strawberries, blueberries, or raspberries)
  • 1 scoop vanilla protein powder (or 1/2 cup plain Greek yogurt)
  • 1 tablespoon almond butter or peanut butter (adds healthy fats)
  • 1 cup unsweetened almond milk (or your preferred milk)
  • 1/2 teaspoon pure vanilla extract
  • Optional: A pinch of cinnamon or a teaspoon of chia seeds

Directions:

  • Layer your blender: Add the almond milk first, followed by the protein powder, nut butter, and vanilla extract.
  • Add the frozen elements: Top with the frozen berries and frozen cauliflower.
  • Blend on high: Process for 60 to 90 seconds until completely smooth and creamy. Add a splash more milk if it is too thick.
